For those times when you need a treat, this low carb apple tart will hit the spot.
Inspired by Melissa over at I Breathe I’m Hungry (see the original here) this luxurious dessert is completely vegan with no eggs or dairy. Green apples keep the carbs low enough to work into your keto diet.
I’m not going to lie, I have a little bit of food blog writers block. Even though Google will penalize this because it doesn’t contain 750 words about how I used to love baked apples as a kid or whatever, I’m going to let you skip straight to the recipe after these pictures.

1 Tbs granulated monkfruit or erythritol sweetener
For the filling:
1-1/2 cups sliced apples (95g)
2 Tbs coconut oil (27g)
1 Tbs lemon juice (15g)
1 Tbs granulated monkfruit or erythritol sweetener, more or less to taste
1 tsp cinnamon
Instructions
Preheat the oven to 180C/ 350F
Combine the crust ingredients in a small bowl and crumble with a fork until well combined. Add more coconut oil or almond flour as needed to optimize consistency.
Press the dough into the bottom of a 6-inch spring-form pan and bake until beginning to brown, about 5-10 minutes.
Meanwhile, combine coconut oil, lemon juice, sweetener and cinnamon in a small bowl and combine with apples, coating the slices.
Arrange apples slices atop the crust and top with any remaining coconut oil mixture.
Bake until apples are soft and golden, about 30-40 minutes.
Remove the sides of the spring-form pan and serve warm or cold. Top with additional cinnamon and granulated sweetener, if desired.
